    Arroz de lapas is rice cooked with limpets, those shellfish that cling to rocks along the coast.

    If you’ve ever tried lapas grilled, you already know the flavor. Salty. Ocean-heavy. Intense. Now imagine that taste absorbed into rice.

    The result is rich, seafood-packed, and deeply Azorean. It’s one of those dishes where the broth does all the talking.

    It’s seriously good.

    The only issue? It’s not easy to find consistently.

    For years, people were catching lapas too young, too small. Now there are strict rules. You can only harvest them above a certain size. Which is good for sustainability, but it means supply isn’t always stable.

    So yes, you’ll find it in regional restaurants.

    But sometimes you won’t. Sometimes it’s just not available.

    When it’s on the menu, don’t hesitate.
