    This is probably the most famous dish from São Miguel. And for good reason. It’s cooked under the earth. In Furnas, where the volcanic activity is still very real, big pots are buried in the ground and left there for 8 to 12 hours. No oven. No stove. Just natural volcanic steam doing the work. What’s inside? Nothing fancy. Meat, sausages, potatoes, cabbage. Simple ingredients. Back in the day, this was not luxury food. It was basic. Filling. Affordable. But the way it’s cooked changes everything. The steam from the volcanic soil gives it a subtle mineral, slightly ashy flavor that’s impossible to properly explain. You just have to taste it. It’s not pretty on the plate. It’s heavy. It’s rustic. But in São Miguel, this is the dish. And you can only get the real one in Furnas.
