    Favas guisadas is a stew made with broad beans, chorizo, and usually a boiled egg cooked in the same sauce.

    And yes, of course, it includes pimenta da terra. This is the Azores. It’s almost mandatory.

    The flavor is strong. The chorizo brings the salt and fat, the pimenta da terra adds depth, and the broad beans absorb everything. It’s one of those heavy, rustic dishes that tastes like home cooking.

    I like it. I don’t mind ordering it. But I wouldn’t say it’s one of my favorites.

    It’s solid. It’s traditional. It’s very Azorean.

    You can find it in some regional restaurants.

    Not all of them serve it. Some have it on the menu, others don’t. It depends on the place.
