    Iscas de fígado is basically liver chopped into small pieces, slow cooked with tons of onion and a powerful, very Azorean sauce made with pimenta da terra. Usually it comes with mashed potatoes. Sometimes fries. Either way, you need something to soak up that sauce. I know what you’re thinking. Liver? Really? Trust me. When it’s done right, it’s full of flavor and surprisingly addictive. Now, here’s the debate.

    Some people cook the liver for too long. It gets firm. Almost hard. They like it that way. Not me. I prefer it tender. Cooked just enough so it stays soft and juicy. That makes all the difference. Strong flavor. Very traditional. And way better than it sounds.
