Massa sovada is a big, sweet Azorean bread that somehow lives between starter and dessert. Some people eat it at the beginning of the meal. Others treat it like a sweet treat at the end. No rules here. When it’s fresh, it’s insanely fluffy. You don’t slice it properly. You just pull it apart with your hands. The fluffier, the better.
That’s the only metric that matters. You’ll see it everywhere during the Espírito Santo festivities, usually served with warm or cold milk. Simple. Comforting. Very traditional. Nothing fancy. Just soft, sweet happiness in bread form.
