Polvo guisado is a traditional octopus stew, slow cooked in red wine with a serious amount of pimenta da terra. The sauce is dark. Very dark. Almost intimidating. But don’t let that fool you. Inside, you’ll find tender octopus and potatoes that slowly absorb all that flavor. The potatoes get soft, almost creamy, soaked in the sauce. And no, you don’t actually taste red wine. It just adds depth. Warmth. Structure.
How the hell do I describe this in English? It’s rich. It’s intense. It’s comforting. It tastes like something that took time and patience. Not rushed. Not fancy. Just deeply satisfying. Another very traditional dish. And if you like octopus, this one hits hard.
