Sopa do Espírito Santo is one of the most traditional soups in the Azores. But here’s the thing. You only see it during the religious festivities of Espírito Santo.
Every parish. Every zone. Every island. They all make it. And of course, everyone claims their version is the right one.
It’s a heavy soup. Very heavy.
It usually includes meat, chicken, kale, cornbread, mint, and even a touch of cinnamon. Yes, cinnamon in a savory soup. It’s sweet, salty, herbal, and intense all at the same time.
It’s not my favorite. It’s too much for me. But culturally? It’s huge.
This is not everyday food. This is ritual food.
Where to Eat This
You won’t find this in restaurants.
You’ll only find it during the Espírito Santo religious celebrations across the Azores.
